Does Anyone Know Of Any Easy Recipes For Low Carb Diets???

Since starting this diet all we have been eating is salads , chicken breast, canned tuna and turkey meatloaf..Please help

    That is one reason that a low carb diet is hard to stay on! I get packages of sliced pepper turkey breast, pastrami, and cheeses from the deli to munch on. Also, a great snack is green olives and English walnuts together. Eggs are important, I make a custard from eggs, cream, Splenda, and vanilla. Very good! Get an Atkins book and a Protein Power book, They all have good recipes and ideas. There are many low carb veggies, I just roasted some yellow squash, zucchini, and eggplant. Slice them, toss with olive oil, arrange on parchment on a cookie sheet, and roast at 425′ about 15- 20 min. They caramelize and are soooo yummy. There are great with a piece of broiled chicken or a steak.
    Another must have are the large ham slices. I keep them in the fridge, easy to fry up in a skillet. Use leftovers with ham for breakfast.

    i used to do atkins, and i got really creative. my 2 favorite things to eat were:
    bake salt and peppered chicken breasts for 25 mins at 350*
    remove from oven then layer with pesto, feta cheese and mozzerella.
    bake for another 5 or so minutes, tl bubbly.
    and for dessert:
    prepare your favorite sugar-free jello like the box says.
    put 1/2 cup or so of heavy whipping cream in the blender and blend til it makes soft peaks.
    add jello, mix another few seconds til smooth.
    pour in cups, let set back up (20 minutes, or so) enjoy!!

    shrimp! It’s really good! Sautée oignons and different vegetables (zuccini, asparagus… whatever you like) and a can of diced tomatoes and some spices. Then cook the shrimp and add to the sauce. Let the sauce thicken a bit. And voila!

    It is difficult to follow a low carb diet. Although, now they are coming out with friendlier products too. I followed one for 3 years and still do it somewhat. Here is a couple of websites that I get recipes from.

    Creamed Beef Florentine
    Ingredients:
    * 1 lb. ground round or sirloin
    * Peanut oil for browning
    * 2 Tablespoons finely minced or chopped onion
    * 1 can whole leaf spinach
    * 1 cup heavy cream
    * 1 teaspoon fresh ground pepper
    * Parmesan or Romano Cheese, preferably fresh
    Brown burger with finely minced onion in peanut oil, taking care to break burger into fine bits as you brown (avoid large clumps of beef.)
    When done, remove burger from skillet to a bowl and set aside. Lower heat to simmer and pour in 1 cup of heavy cream and stir until cream begins to reduce. Add ground black pepper and stir. Add 1 can of well drained spinach and stir gently until hot and the cream is getting a bit thick. Add burger meat back into skillet gently and mix well with sauce.
    Spoon into shallow bowls and top with salt to taste and lots and lots of Parmesan or Romano Cheeses. It’s quite delicious, but admittedly a bit odd looking.
    Serves 4. 4.5 carb grams per serving.
