It varies. Some say when you’re starting, no more than 100g per day, and that this should dwindle down to about 20-50 per day. These carbs coming from vegetable/fruit material.

    If you use Atkins, or South Beach as a guide, they both say to start off at 20 grams a day for two weeks (to jump start the process) – that alone rules out all breads/grains, the starchier vegetables and all fruit. Then afterward gradually go up in carb intake.
