Sure, that sounds fine. Bring plenty of carrots because they will fill you up better than the fruit will. Bring a little dressing to dip the carrots.
Unless your diet has to practically exclude all protein, nuts would be a good addition. Or some peanut butter to dip the carrots.

Why don’t you the fruit and vegetables as they are, if you don’t want to make a salad out of them? You can eat them with peanut butter… at least the fruit :)
Low carb AND low protein? What do you eat then? Fat? Or do you just eat less of everything? In that case, I don’t think it can be called “low-carb” or “low-protein” diet.

Low protein and low carb? So how do you get your nutrients?
    Hummus with veggies.
Low carb pasta salad (I think you can buy low carb pasta, right?)- add some cheese, veggies, olives, and a mayo or italian dressing

what… just eat something.. geez.. bring a few biscuits or crackers, a banana and satiate yourself. Seeds are good too to satisfy your hunger. Pumpkin seeds, sunflower, etc.
Fruit juice like a naked juice smoothie will fill you up..
